Lambrusco, like the Terminator is back. The 70’s staple drink of the middle classes has come out of retirement and off the bottom shelves of a thousand corner shops. It’s gone up market and restyled itself. This Lammie is fresh, easy-drinking and is not sweet in any way. Put it with a plate of cured meat and they’ll get it on like a pair of teenagers. The red fruit notes in an easy drinking form and it’s right levels of acidity and bubbles, oh the bubbles, just give it that lift that it needs to cut through the fat and salt. A very conscious coupling indeed.
